Fast Ed’s Lamb Ribs with Longstocking Kolsch Lager

What a guy, what a chef!
We absolutely loved having Fast Ed from Better Homes and Gardens visit our little brewery!

We promised to share Ed’s to-die-for Lamb Rib recipe with a miso and Kolsch Lager glaze with you and HERE IT IS!
It’s super easy and you’ll LOVE it!

Prep: 15 Minutes – Cook: 80 Minutes – Serves 8

Ingredients
• 16 lamb ribs, partially trimmed
• 2 Tbsp white miso paste
• 2 tsp chilli powder
• 2 tsp sea-salt akes
• 1⁄4 cup treacle
• 120ml apple cider vinegar
• 200ml Longstocking Kolsch Lager
• 3 Lebanese cucumbers, cut into wedges
• 1 bunch radish, trimmed, halved

Method
Preheat oven 180oC. Put ribs, miso, chilli pow der and salt in a large baking dish, tossing to coat. Drizzle over treacle, vinegar and ale. Cover with a layer of baking paper, followed by a layer of foil, sealing tightly to enclose. Bake for 1 hour.

Uncover ribs, skim off excess fat and cook for further 20 minutes or until crispy.

Arrange ribs on a serving platter and serve with radish and cucumber on the side.

Our Kolsch Lager…
Yes that’s right our Kolsch is indeed a lager not the traditional ale!
We use a lager based yeast to give our Kolsch a mouthfeel more like a lager. An easy drinking Lager with a blend of Galaxy and Topaz hops giving a floral aroma backed by soft spice. Its a perfect quencher for a Spring afternoon.
